Lemony 21-Seasoning Salute Chicken Marinade

Let’s be real…plain chicken breast can get super boring, especially when you’re dieting and trying to get a ton of lean protein in. Well you’re in luck!!! I randomly made this chicken marinade when I was B-O-R-E-D with my chicken and veggie meals and needed something to spice it up!

You can let this marinade work overnight, but it’s good even if you only have an hour or so before you need to get this savory lemony yummy goodness into your mouth! You probably already have all of these ingredients in your fridge or pantry, and if you’re a Trader Joe’s fanatic like me, you probably even have the famous 21 Seasoning Salute in your arsenal too!

So let’s get down to it…


Lemony 21-Seasoning Salute Chicken Marinade

Ingredients:

  • 1-2 lbs Chicken Breast
  • 1 Lemon, juiced
  • 1 Tbl 21 Seasoning Salute (Trader Joe’s)
  • 1 Tbl Garlic Powder
  • 2 Tsp Salt
  • 2 Tsp Pepper

Directions:

  1. I like to buy the breast filets or cut my big chicken breast in half to make them a little thinner. It helps for the marinade to absorb a little faster, and cooks faster…win win!!
  2. Place everything into a resealable bag and push all the air out so the marinade is stuck on the chicken. Roll it up tight so everything is covered and let it sit in the fridge for an hour or so, or overnight. The longer it sits the more lemony it’ll taste.
  3. I like to grill these for about 4 mins per side, and then let them rest under foil for 10 mins to really keep them juicy, but you can saute or even bake the chicken and it tastes just as good!

It’s seriously that easy folks! For some reason, the combination of lemon and the 21 Seasoning Salute just hits the spot and makes you WANT to eat that super simple chicken and veggie meal day after day!
