Paleo Shrimp Cocktail |Whole 30, Paleo

This go to snack has saved me more than once! Its FULL of lean protein, it hits that sweet and savory spot, and even has a little kick to it.

Shrimp cocktail is a great meal prep item at the beginning of the week, and since it tastes best cold, it’s a super easy grab and go snack…or for me, something I can grab quick when I get home starving after work and want to eat All.The.Things.

I adapted my cocktail sauce from the amazing Whole 30 ketchup recipe from Danielle Walker’s Against All Grain Paleo Ketchup recipe on her blog. It’s seriously so good, you won’t tell the different from store bought…PROMISE!

So here’s how I created one of my new favorite Paleo and Whole 30 snacks…


Whole 30 Shrimp Cocktail
(makes 3-4 servings)

Ingredients

  • 1/2 cup Paleo 30 Ketchup
  • 2-3 tsp Prepared Horseradish (the more the spicier)
  • 1 Tbl Lemon Juice
  • 1 lb Shrimp, peeled and deveined (my fave are the Argentinian Red Shrimp from Trader Joe’s – they are HUGE, already cleaned, and ready to just thaw and use!)

Directions

  1. Combine ketchup, horseradish and lemon juice and set aside. The longer it sits, the better it gets, so prepping this at the beginning of the week is a great idea!
  2. Saute your shrimp for 2-3 mins per side, until pink and firm. I like mine cold, so I’ll throw it in the fridge with the sauce for a couple hours, or just to have on hand through out the week!

Yep…it’s that easy!
