Quick Chicken Parmesan

I love Italian food and sometimes I need to get my fix. I love zucchini noodles for those low carb times, or 2 oz of whole wheat pasta is a great serving too! This quick chicken parmesan hits the spot without any of the breading or frying!

Quick Chicken Parmesan
2 (4-6 oz) Boneless, Skinless Chicken Breast
1 tsp Olive Oil
1/2 tsp Garlic Powder
1/2 cup No Salt Added Diced Tomatoes
1/2 cup No Salt Added Tomato Sauce
1 tsp Herbs de Provence (or any Italian Seasoning)
1/4 tsp Red Pepper Flakes
1/4 cup Reduced Fat Shredded Mozzarella

1. Heat olive oil in the pan and sauté chicken breast for 4-5 minutes per size, depending on how think your chicken breast is. If you’re using a meat thermometer it should reach 150 to be cooked through.

2. In a separate pan mix together diced tomatoes, tomato sauce, herbs de provence, and red pepper flakes. Simmer on low until heated through and flavors are melded together. (This usually takes the same amount of time as it does to cook the chicken through.)

3. Once chicken is cooked through, spoon tomato sauce over the chicken and top with 2 Tbl of mozzarella per chicken breast.

4. Serve over zucchini noodles or 2 oz of whole wheat pasta!
